Raw Walnut Fudge

Ingredients
- 2/3 cup cacao powder
- 1/4 cup coconut oil, warmed to liquid
- 1 cup pitted dates
- 1/2 cup raisins or dried cherries
- Pinch cinnamon
- 1 1/2 cups walnuts (soaked)
Instructions
- Put the dates, raisins & coconut oil in a food processor and process until smooth
- Add the cinnamon and cacao and process again
- Remove the mixture from the processor and add the walnuts
- Knead the walnuts in to the fudge mixture
- Pack the fudge firmly into a square or rectangular tin lined with grease proof paper about 1/2 inch thick.
- Cut into pieces
- Refrigerate for 1 hour prior to serving
Notes
- Will keep for up to 2 weeks stored in a glass container in the fridge
