Walnut Fudge

Guilt free, dairy free, sugar free

Raw Walnut Fudge
  1. 2/3 cup cacao powder
  2. 1/4 cup coconut oil, warmed to liquid
  3. 1 cup pitted dates
  4. 1/2 cup raisins or dried cherries
  5. Pinch cinnamon
  6. 1 1/2 cups walnuts (soaked)
  1. Put the dates, raisins & coconut oil in a food processor and process until smooth
  2. Add the cinnamon and cacao and process again
  3. Remove the mixture from the processor and add the walnuts
  4. Knead the walnuts in to the fudge mixture
  5. Pack the fudge firmly into a square or rectangular tin lined with grease proof paper about 1/2 inch thick.
  6. Cut into pieces
  7. Refrigerate for 1 hour prior to serving
  1. Will keep for up to 2 weeks stored in a glass container in the fridge
