Pickled Red Onion

  1. 1 red onion, thinly sliced using a mandolin
  2. 1/4 cup lime juice
  3. 1/4 cup agave nectar
  4. 1 teaspoon Himalayan crystal salt
  1. Combine ingredients, put in a glass jar, and allow to sit on the kitchen counter for 8 hours, before refrigerating
  1. Store in a glass jar in the fridge for up to 1 week
